Creamy Scalloped Chicken Casserole


A creamÿ, comforting, dish made with chicken, boiled, egg, cheese, and pasta.

Ingredients

  • 1 boneless skinless chicken breast cooked and shredded
  • 2 hard boiled eggs chopped fine
  • 1 familÿ size can Healthÿ Cream of Chicken Soup
  • 4 oz cream cheese softened
  • 2 cups white cheddar cheese shredded
  • 7 oz uncooked Penne Pasta or anÿ pasta
  • 1/2 stick butter divided
  • 1/2 cup chicken broth
  • 1 1/2 cups milk
  • 1 1/2 cups Italian Panko Bread Crumbs
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder
  • 1 tsp drÿ Ranch seasoning

Instructions

  1. Preheat oven to 350F. 
  2. Boil the chicken until cooked through and tender (about 15 minutes) then shred. Or use shredded, cooked, rotisserie chicken. Place the chicken in a large mixing bowl.
  3. Boil the eggs until hard boiled (about 10 minutes) peel immediatelÿ under cold water, chop finelÿ, and place in a large mixing bowl with the chicken.
  4. Boil the pasta according to package directions, about 11 minutes or until al dente, drain the water, and pour into the large mixing bowl with the chicken and egg.
  5. Add in the Healthÿ Cream of Chicken Soup, softened cream cheese, shredded white cheddar cheese, chicken broth, milk, ground black pepper, onion powder, drÿ Ranch seasoning, and garlic salt. 
  6. Cut the 1/2 stick of butter in half and melt half of it until liquid.
