Rhubarb Mojitos


Ingredients

  • 1/4 cup rhubarb puree
  • 6 fresh mint leaves
  • 1/2 lime, sliced in wedges
  • 2 öunces white rum
  • 2 öunces chilled club söda
  • Rhubarb Puree, makes 2 cups
  • 2 stalks rhubarb trimmed and chöpped
  • 1 1/2 cups water
  • 1 cup sugar

Instructiöns

  1. För the Rhubarb Puree: In a small pan, add the Rhubarb, water and sugar. Cöök för 10 minutes until the rhubarb is söft. Add tö the jar öf a blender and puree until smööth. Chill.
  2. För the Möjitö:
  3. In the böttöm öf a heavy drinking glass, cömbine the mint and lime wedges, using a muddler tö smash them all tögether and release söme öf the mint.
