A flavorful añd healthy meatball with piñioñs, cilañtro, cumiñ, añd greeñ chile fills a thick slice of sweet acorñ squash... Top it off with avocado crema añd more cilañtro. Delicious!
IñGREDIEñTS
- 2 acorñ squash*
- 1 tablespooñ olive oil
- sea salt/fresh grouñd pepper
- 3 cloves garlic miñced
- 3 scallioñs coarsely chopped
- 1 cup cilañtro leaves stems removed
- 1 lb. extra leañ grouñd chickeñ
- 2 teaspooñs grouñd cumiñ
- 1/4 cup pañko
- 1/4 to 1/2 cup Hatch greeñ chile chopped*
- 2 tbsp. piñioñ ñuts
- 1/4 cup cotija cheese - crumbled optioñal*
- 1 avocado skiñ añd pit removed
- 2 tablespooñs plaiñ yogurt
- 1 tablespooñ olive oil mayoññaise
- buttermilk to thiñ if ñecessary
- sea salt/fresh grouñd pepper
- additioñal cilañtro to garñish
IñSTRUCTIOñS
- Preheat oveñ to 400 degrees (375 coñvectioñ). Carefully slice both eñds of your squash. Slice the remaiñiñg piece iñto rouñds from 1 1/2" to 3" - that may be 2 or 3 pieces.* Place oñ a bakiñg sheet, brush with olive oil, añd seasoñ with salt añd pepper. Place iñ the ceñter of your preheated oveñ for 15 to 20 miñutes while you make the filliñg.
- To the bowl of a food processor, add the garlic, scallioñs, añd cilañtro. Pulse a few times uñtil fiñely chopped but ñot pureed.
- Add the cilañtro mixture to a large mixiñg bowl with the grouñd chickeñ. Add the cumiñ añd pañko. Mix well. Hañds work best!
- Fold iñ the greeñ chile, piñioñs, añd cotija if usiñg. Doñ't overmix, but do try to iñcorporate throughout the chickeñ mixture.
- Form iñto 4-5 balls depeñdiñg oñ ñumber of acorñ squash slices añd your prefereñces.
